Mango Pineapple Fruit Salad

Ingredients:

  • 2 ripe mangoes, peeled, pitted, and diced
  • 1 small pineapple, peeled, cored, and diced
  • 1 cup fresh strawberries, hulled and halved
  • 1 small red onion, finely chopped (optional for a hint of savory flavor)
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lime
  • 2 tablespoons honey (adjust to taste)
  • 1/4 teaspoon ground cinnamon (optional)
  • A pinch of salt

Instructions:

  1. Prepare the Fruits:

    • Peel and dice the mangoes.
    • Peel, core, and dice the pineapple.
    • Hull and halve the strawberries.
    • If using the red onion, finely chop it.
  2. Combine the Fruits:

    • In a large serving bowl, combine the diced mangoes, pineapple, strawberries, and chopped red onion (if using). Gently toss to mix the fruits.
  3. Make the Dressing:

    • In a separate bowl, whisk together the lime juice, honey, ground cinnamon (if using), and a pinch of salt until well combined.
  4. Drizzle the Dressing:

    • Drizzle the honey-lime dressing over the fruit mixture. Gently toss the fruit salad to coat it evenly with the dressing.
  5. Chill and Marinate:

    • Cover the fruit salad and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.
  6. Garnish and Serve:

    • Just before serving, sprinkle the chopped mint leaves over the fruit salad.
    • Serve your mango pineapple fruit salad chilled.
