Cauliflower Soup Indian

Ingredients:

  • 1 large cauliflower head, cut into florets
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and black pepper to taste
  • Fresh cilantro leaves, for garnish
  • Sliced green chilies (optional, for extra heat)

Instructions:

1. Roast the Cauliflower:

  • Preheat your oven to 400°F (200°C).
  • Place the cauliflower florets on a baking sheet, drizzle with olive oil, and season with salt and black pepper.
  • Roast in the oven for about 25-30 minutes or until the cauliflower is tender and lightly browned. Set aside.

2. Sauté Aromatics:

  • In a large soup pot, heat a bit of olive oil over medium heat.
  • Add the chopped onion and sauté until it becomes translucent.
  • Add the minced garlic and ginger, and continue to sauté for another minute or until fragrant.

3. Spice It Up:

  • Stir in the ground cumin, ground coriander, turmeric, garam masala, and cayenne pepper. Cook for a few minutes to toast the spices.

4. Add Broth and Cauliflower:

  • Pour in the vegetable broth and add the roasted cauliflower florets.
  • Bring the mixture to a simmer and cook for about 15-20 minutes, allowing the flavors to meld together.

5. Blend the Soup:

  • Use an immersion blender or transfer the soup in batches to a blender (be cautious when blending hot liquids) and blend until smooth and creamy.

6. Add Coconut Milk:

  • Return the blended soup to the pot, and stir in the coconut milk. Heat the soup over low heat, but do not allow it to boil.

7. Season and Serve:

  • Season the soup with salt and black pepper to taste. Adjust the spice level as needed.
  • Serve your Indian cauliflower soup hot, garnished with fresh cilantro leaves and sliced green chilies for added heat if desired.
