Ingredients:

  • 2-3 large potatoes (boiled, peeled, and diced into small cubes)
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped tomatoes
  • 2-3 green chilies (finely chopped, adjust to your spice preference)
  • 1/4 cup chopped fresh coriander leaves
  • 1/4 cup tamarind chutney
  • 1/4 cup mint-coriander chutney (green chutney)
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon chaat masala
  • Salt to taste
  • 2-3 tablespoons vegetable oil
  • Sev (crispy chickpea or gram flour noodles) for garnish

Instructions:

  1. Heat the vegetable oil in a pan over medium heat.

  2. Add the diced potatoes to the hot oil. Fry them until they turn golden brown and crispy. Make sure to flip them occasionally for even frying. Once done, remove them from the oil and place them on a plate lined with paper towels to drain excess oil.

  3. In a mixing bowl, combine the fried potatoes, chopped onions, chopped tomatoes, green chilies, and fresh coriander leaves.

  4. Add red chili powder, roasted cumin powder, and salt to the mixture. Mix well to ensure the spices coat the ingredients evenly.

  5. Drizzle tamarind chutney and green chutney over the mixture. These chutneys provide the tangy and spicy flavors that make Aloo Chatpata Chat so delicious.

  6. Sprinkle chaat masala on top for an extra burst of flavor.

  7. Toss everything together gently to combine all the ingredients and coat them with the chutneys and spices.

  8. Taste the mixture and adjust the seasoning or spiciness as needed.

  9. To serve, portion out the Aloo Chatpata Chat onto individual plates or bowls. Garnish with a generous amount of sev for added crunch and visual appeal.

  10. Serve the Aloo Chatpata Chat immediately while it's fresh and crispy. Enjoy the delightful combination of flavors!
