Indian Desi Pasta

Ingredients:

  • 2 cups pasta (penne, fusilli, or any shape of your choice)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 green bell pepper (capsicum), finely chopped
  • 1/2 cup frozen green peas
  • 2-3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chilies, finely chopped (adjust to your spice preference)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground cumin (jeera)
  • 1/2 teaspoon ground coriander (dhania)
  • Salt to taste
  • Vegetable oil for cooking
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. Cook the Pasta:

    • Boil the pasta according to the package instructions until it's al dente. Drain and set it aside.
  2. Prepare the Base:

    • Heat a pan over medium heat and add vegetable oil.
    • Add cumin seeds and let them splutter.
  3. Sauté Aromatics:

    • Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute or until they become fragrant.
  4. Add Onions:

    • Add the finely chopped onions and sauté until they become translucent.
  5. Add Tomatoes:

    • Add the chopped tomatoes and cook until they become soft and mushy.
  6. Spice It Up:

    • Add turmeric powder, red chili powder, garam masala, ground cumin, ground coriander, and salt. Mix well to incorporate the spices.
  7. Bell Peppers and Green Peas:

    • Add the finely chopped green bell pepper (capsicum) and frozen green peas. Sauté for a few minutes until the vegetables become slightly tender.
  8. Combine with Pasta:

    • Add the boiled pasta to the pan and toss everything together. Ensure that the pasta is coated with the spicy mixture.
  9. Garnish:

    • Garnish with fresh coriander leaves.
  10. Serve Hot:

    • Serve the Indian Desi Pasta hot with a side of yogurt, pickle, or chutney.
