Spinach & Rice Crustless Pie

Ingredients:

  • 1 cup cooked rice (white or brown)
  • 4 cups fresh spinach, washed and chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper, to taste
  • Olive oil for sautéing

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
  2. Sauté the Spinach:

    • In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
  3. Add Spinach:

    • Add the chopped spinach to the skillet and sauté until it wilts and most of the moisture evaporates. Allow it to cool slightly.
  4. Mix the Ingredients:

    • In a large mixing bowl, combine the cooked rice, sautéed spinach and onions, grated Parmesan cheese, eggs, milk, ground nutmeg, salt, and black pepper. Mix until all the ingredients are well combined.
  5. Grease a Baking Dish:

    • Grease a pie dish or a baking dish of your choice.
  6. Pour the Mixture:

    • Pour the spinach and rice mixture into the greased dish.
  7. Bake:

    • Place the dish in the preheated oven and bake for 30-35 minutes, or until the pie is set and the top is lightly browned.
  8. Serve:

    • Remove from the oven and let it cool for a few minutes. Slice the crustless pie into portions and serve.
