Quick and Delicious One-Pot Meals for Busy Weeknights

  1. One-Pot Pasta Primavera:

    • In a large skillet, combine pasta, vegetable broth, diced tomatoes, and your choice of vegetables (e.g., bell peppers, zucchini, cherry tomatoes).
    • Add Italian seasoning, garlic, and salt to taste.
    • Cook until the pasta is al dente, and the liquid is mostly absorbed.
    • Finish with grated Parmesan cheese and fresh basil.
  2. Chicken and Rice Casserole:

    • In a Dutch oven or large skillet, sear chicken thighs on both sides.

    • Gradually add warm chicken or vegetable broth while stirring until the rice is creamy and tender.
