Pudina Aloo Recipe

Ingredients:

  • 4 medium-sized potatoes, peeled and diced
  • 1 cup fresh mint leaves (pudina)
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish (optional)

Instructions:

  1. Prepare the Mint Paste:

    • Wash the fresh mint leaves thoroughly. Blend them into a smooth paste using a food processor or blender. Add a little water if needed to make a paste. Set aside.
  2. Cook the Potatoes:

    • Heat oil in a pan or skillet over medium heat. Add cumin seeds and mustard seeds. Let them sizzle for a few seconds.
    • Add the finely chopped onion and green chilies. Sauté until the onions turn translucent.
  3. Add Spices:

    • Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for a minute until the spices are aromatic.
  4. Add Mint Paste:

    • Add the prepared mint paste to the pan. Cook it for 2-3 minutes, stirring occasionally.
  5. Add Potatoes:

    • Add the diced potatoes to the mint mixture. Stir well to coat the potatoes with the minty spices.
  6. Cook Covered:

    • Cover the pan and let the Pudina Aloo cook over low to medium heat. Stir occasionally to prevent sticking and ensure even cooking.
  7. Simmer:

    • Cook until the potatoes are tender and fully cooked. This may take about 15-20 minutes.
  8. Garnish and Serve:

    • Once the potatoes are done, garnish the Pudina Aloo with fresh coriander leaves (if desired).
    • Serve the dish hot as a side dish with roti, naan, or rice.
