Grilled Potato Masala Sandwich

Ingredients:

For the Potato Masala:

  • 2 large potatoes, boiled, peeled, and mashed
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1/2 cup boiled green peas
  • 2-3 green chilies, finely chopped (adjust to your spice preference)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • A pinch of asafoetida (hing)
  • 1-2 tablespoons vegetable oil
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Fresh lemon juice (optional)

For the Sandwich:

  • Slices of bread (white or whole wheat)
  • Butter or ghee for grilling
  • Tomato ketchup or chutney (optional)

Instructions:

For the Potato Masala:

  1. Prepare the Spices:

    • In a small bowl, mix the turmeric powder, garam masala, and red chili powder with a little water to make a paste.
  2. Sauté the Spices:

    • Heat 1-2 tablespoons of vegetable oil in a pan over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
    • Add the finely chopped onion and green chilies. Sauté until the onion becomes translucent.
  3. Add Tomato:

    • Add the finely chopped tomato and cook until it becomes soft and mushy.
  4. Add Spices:

    • Add the spice paste prepared earlier and cook for a couple of minutes until the oil separates.
  5. Add Potatoes and Peas:

    • Add the mashed potatoes and boiled green peas. Mix well to combine.
  6. Season and Garnish:

    • Season with salt and add a pinch of asafoetida (hing). Stir in fresh coriander leaves and a dash of fresh lemon juice for extra flavor if desired.
  7. Remove from Heat:

    • Remove the potato masala from the heat and let it cool.

For the Sandwich:

  1. Assemble the Sandwich:

    • Take two slices of bread. Spread a layer of the prepared potato masala on one slice. Optionally, you can spread tomato ketchup or chutney on the other slice.
  2. Grill the Sandwich:

    • Place the other bread slice on top to create a sandwich. Spread butter or ghee on the outside of the sandwich.
  3. Grill the Sandwich:

    • Heat a griddle or sandwich maker. Grill the sandwich on both sides until it becomes golden brown and crispy.
  4. Slice and Serve:

    • Remove the sandwich from the griddle, let it cool for a minute, and then slice it into halves or quarters.
  5. Serve Hot:

    • Serve the Grilled Potato Masala Sandwich hot with additional ketchup or chutney if desired.
