Cranberry Pickle

Ingredients:

  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Instructions:

  1. Rinse the cranberries and remove any stems or debris. Drain them thoroughly.

  2. In a saucepan, combine the sugar, vinegar, water, ground cinnamon, ground cloves, ground allspice, ground ginger, and salt. Stir well to combine.

  3. Heat the mixture over medium heat, stirring until the sugar is completely dissolved. This will create a sweet and tangy syrup.

  4. Add the cranberries to the saucepan and stir to coat them with the syrup.

  5. Cook the cranberries over medium heat for about 10-15 minutes, or until they start to pop and become tender. Stir occasionally to prevent sticking and ensure even cooking.

  6. Remove the saucepan from the heat and allow the cranberry pickle to cool to room temperature. As it cools, the mixture will thicken.

  7. Once the cranberry pickle has cooled, transfer it to a clean, airtight jar or container.

  8. Refrigerate the cranberry pickle for a few hours or overnight to allow the flavors to meld and develop.

  9. Serve the cranberry pickle as a delightful condiment alongside various dishes. It pairs well with roast meats, sandwiches, cheese platters, and more.
