Comfort Food Classics

Ingredients:

  • 8 ounces (about 2 cups) of elbow macaroni
  • 2 1/2 cups of shredded sharp cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 3 cups of milk
  • 1/4 cup of butter
  • 1/4 cup of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of paprika (optional)
  • 1/4 teaspoon of garlic powder (optional)
  • 1/4 teaspoon of onion powder (optional)

Instructions:

  1. Cook the Macaroni:

    • Bring a large pot of salted water to a boil.
    • Add the macaroni and cook according to the package instructions until al dente.
    • Drain the macaroni and set it aside.
  2. Make the Cheese Sauce:

    • In a medium saucepan, melt the butter over medium heat.
    • Stir in the flour and cook for about 1-2 minutes until the mixture turns a light golden color. This is your roux, which will thicken the sauce.
    • Gradually whisk in the milk, and continue whisking until the mixture thickens and is free of lumps. This should take about 5-7 minutes.
    • Reduce the heat to low, then add 2 cups of shredded cheddar cheese and the grated Parmesan cheese. Stir until the cheese is completely melted and the sauce is smooth.
    • Season the sauce with salt, pepper, and any optional spices you prefer, such as paprika, garlic powder, or onion powder.
  3. Combine Macaroni and Cheese Sauce:

    • Add the cooked macaroni to the cheese sauce and stir until the pasta is well coated with the creamy cheese mixture.
  4. Bake (Optional):

    • Preheat your oven to 350°F (175°C).
    • Transfer the macaroni and cheese to a greased baking dish. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
    • Bake for about 20-25 minutes or until the top is golden and bubbling. Baking is optional, but it adds a deliciously crispy layer on top.
  5. Serve:

    • Allow the macaroni and cheese to cool for a few minutes before serving.
    • Garnish with fresh herbs, breadcrumbs, or extra grated Parmesan cheese if desired.
