Chicken in a Clay Pot Recipe

ngredients:

  • 1 whole chicken (about 3-4 pounds), cleaned and cut into serving pieces
  • 2-3 cloves of garlic, minced
  • 1 medium onion, finely chopped
  • 2-3 tablespoons olive oil or cooking oil
  • 2-3 large carrots, peeled and cut into chunks
  • 2-3 potatoes, peeled and cut into chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 teaspoon dried thyme (or use fresh if available)
  • 1 teaspoon dried rosemary (or use fresh if available)
  • Salt and black pepper to taste
  • 1/2 cup chicken broth or water
  • 1/2 cup white wine (optional)
  • Fresh parsley, for garnish

Instructions:

  1. Soak the clay pot: If your clay pot requires soaking before use, follow the manufacturer's instructions to ensure it's properly seasoned.

  2. Preheat the oven: Preheat your oven to 350°F (175°C).

  3. Prepare the chicken: Season the chicken pieces with salt, black pepper, thyme, and rosemary. Allow them to sit for a few minutes while you prepare the vegetables.

  4. Sauté the aromatics: In a skillet or a pan, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté for a few minutes until the onion becomes translucent.

  5. Layer the clay pot: In the pre-soaked clay pot, begin layering the ingredients. Start with a layer of carrots and potatoes at the bottom, followed by the seasoned chicken pieces. Add the sautéed garlic and onions, then layer the red and green bell peppers on top.

  6. Add liquid: Pour the chicken broth or water, and white wine (if using) over the layers. This will create a flavorful cooking liquid.

  7. Cover and bake: Place the lid on the clay pot and put it in the preheated oven. Bake for about 1.5 to 2 hours, or until the chicken is cooked through, and the vegetables are tender. You can check the chicken's internal temperature with a meat thermometer; it should read 165°F (74°C).

  8. Garnish and serve: Once the chicken is cooked, remove the clay pot from the oven. Sprinkle fresh parsley over the dish for a pop of color and extra flavor.

  9. Serve: Serve the chicken in a clay pot directly at the table, family-style. Enjoy your delicious, tender, and aromatic meal!
