Asparagus Broccoli Stir Fry

Ingredients:

  • 1 bunch of fresh asparagus, tough ends trimmed and cut into 2-inch pieces
  • 1 head of broccoli, cut into florets
  • 2 tablespoons vegetable oil (such as sesame oil or peanut oil)
  • 3 cloves of garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 1 red bell pepper, thinly sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • Sesame seeds and sliced green onions for garnish (optional)
  • Cooked rice or noodles for serving

Instructions:

  1. Prepare the Vegetables:

    • Trim the tough ends of the asparagus and cut them into 2-inch pieces.
    • Cut the broccoli into florets, and you can also peel and chop the broccoli stems into thin slices if desired.
    • Thinly slice the red bell pepper.
    • Mince the garlic and ginger.
  2. Make the Stir-Fry Sauce:

    • In a small bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, honey or brown sugar, and red pepper flakes. Set the sauce aside.
  3. Stir-Fry the Vegetables:

    • Heat the vegetable oil in a large skillet or wok over medium-high heat.
    • Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant.
    • Add the asparagus and broccoli to the skillet and stir-fry for 5-6 minutes until they become tender-crisp. You can cover the skillet for a minute or two to help steam the vegetables if needed.
  4. Add the Red Bell Pepper:

    • Add the sliced red bell pepper to the skillet and stir-fry for an additional 2-3 minutes.
  5. Combine with the Sauce:

    • Pour the stir-fry sauce over the vegetables in the skillet and toss to coat. Cook for 1-2 minutes to heat the sauce and let it thicken slightly.
  6. Serve:

    • Serve the asparagus and broccoli stir-fry over cooked rice or noodles.
    • Garnish with sesame seeds and sliced green onions if desired.
